Colt's Chalupas Ingrediants:1 dozen Corn Totilias
Sliced American cheese (12) or (2 cups) grated Cheddar Cheese or any cheese ya like.
10 oz can refried beans
Quarter cup sliced or diced Jalapenos (to taste)
1 Diced tomato
1 Diced onion
1 Diced avacado
1/4 head shreaded lettuce
Salasa if dessired
Preperation:Fry corn tortilas in large skillet with cooking oil at 350 F
until crisp
Heat refried bean in saucepan until hot.
Spread beans over fried tortillas & top with cheese & jalapanos.
Either place in oven or microwave to melt cheese.
Remove & top with lettuce, tomato, onion, avacado & salsa
(to taste)
Feeds about 4
I will also use left over pinto beans from my BBQ's that I mush up myself for a nice smokey flavor thats hard to beat.
You can also top em with Fajita meat, chicken, or ground beef.
