Here's the recipe to my sister Dinahs
Beer Butt Chicken DINAH LEA'S FAVORITE BEER CAN CHICKEN RUB
I quadruple this recipe in order to have enough for the next time I make it.
1/4 Cup Firmly packed brown sugar
1/4 Cup Sweet paprika
3 tablespoons black pepper
2 tablespoons coarse salt
1 talblespoon hickory-smoked salt or more coarse salt
2 teaspoons onion powder
2 teaspoons garlic powder
2 teasppons celery seeds
1 teaspoon cayenne pepper
Mix with hands. Store in airtight jar. Will keep for at least 6 months.
Rub inside and outside of chicken. Loosen skin and rub between skin and meat. Put a couple of teaspoons into the 1/2 can of beer. Place chicken butt on top of beer can. Put either an apple or potatoe in the neck of the chicken. Be sure if cooking in oven or pit that you place a cookie sheet or the like under the can of beer with the chicken to catch the drippings. Cook on pit or cook in oven. I think I cook in oven at 400 degrees for 1 1/2 hr or so.
